I was a naughty girl tonight... NAUGHTY. Curtis got some AWESOME fresh peaches from our dear friends at Smith's Nursery and Farmer's Market in Saltillo and I decided to make a peach cobbler. Who would have a better recipe for pure Southern comfort food that Paula Deen?! It did not disappoint!<br />

Put the butter in a 3-quart casserole dish and place in oven to melt.<br />
Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping.(This is where I added the vanilla. It just made sense.) Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. (yuck!)<br />

Batter will rise to top during baking. Bake for 30 to 45 minutes.<br />

In our 10 years of marriage, he has given me props that I have finally almost gotten the hang of it. I make this for birthdays, anniversary, Father's Day, any time a special dinner for my man is warranted.<br />

No reason to mess with perfection, but tonight I made a variation of our traditional beefy meatballs and spaghetti, and it turned out so great I decided to share it with ya'll. (Incidentally, if you would rather use beef, the recipe is exactly the same.)<br />

</tbody></table>TURKEY MEATBALLS with BOWTIE PASTA<br />
<br />
Meatballs:<br />
1.5 lbs ground turkey (my first time cooking with ground turkey, and it was a smashing success!!!)<br />
1/4 cup bread crumbs (I like Italian variety, but any kind will do, or some crushed up crackers or crusty bread... you get it!)<br />
1 egg<br />
Splash of milk (maybe 1/8 cup)<br />
1 Tbsp. garlic powder<br />
2 Tbsp. grated parmesan (fresh would be awesome, but I shook mine right out of the green can) <br />
1 tsp. onion salt<br />
1 tsp. dried oregano<br />
Salt and pepper (to taste)<br />
<br />
1 Tbsp. olive oil (for cooking meatballs)<br />
<br />
2 jars of your favorite spaghetti sauce<br />
1 Tbsp. brown sugar<br />
<br />
1 lb. Farfalle pasta (bowties)<br />
Salt <br />
<br />
Mix all meatball ingredients with your hands, just until well combined. Mixing too much will make tough meatballs. Roll into walnut-sized balls. Heat olive oil in a pan. Cook meatballs until nicely browned (turning to evenly cook.) Drain meatballs and place in a casserole dish. Cover with two jars or spaghetti sauce. If you make your own, go ahead and use that, but I haven't been able to make any that tastes any better than my "doctored" version of Ragu or Hunt's. Sprinkle brown sugar on top of sauce and stir in to combine. Bake meatballs and sauce for 30 - 45 minutes in 350 degree oven. The longer you bake it together the more the meatballs take on the saucey taste and become even yummier!<br />

Prepare pasta according to package directions. Make sure you salt your pasta water. Makes a HUGE difference in the yumminess of your pasta!<br />
<br />
Nothing beats good ole red meat, but these turkey meatballs aren't bad for a slightly healthier choice! I dare say my family might not have known the difference if I hadn't made such a big deal out of how fancy I was for buying turkey. LOL!<br />
<br />
Serve this up with some garlic bread and you have got yourself an Italian feast! Mama Mia! :) Let me know if you make this and how yours turn out. Neither of our smart phones were very "smart" when it came to locating a good recipe for us. So we started asking everyone how much of this and how much of that went into homemade ice cream. No one ever gave us exact measurements until we got to Tiny (my Daddy) - National Guard Mess Sargent Extraordinaire! :) He said, "Well, this is how Mother (Mamaw Lucille again, ya'll) made it." And we began cracking eggs, opening cans, borrowing vanilla flavoring (thanks kind neighbors down the street!!!), measuring, pouring and stirring until we got it just right. Uncle Kenny and Curtis manned the freezer/ice/salt situation. Although we all thought it took WAY TOO LONG (hungry, hungry Harrisons), it finally froze, and ya'll, it was the best, richest, smoothest homemade ice cream we've ever had! </div>I can remember standing on a chair at the counter with my Mamaw (Lucille) making chicken and dumplings with her. So, when I do something like this, I always travel back in time to 1986 and cooking in that tiny kitchen on Harrison Hill!<br />
<br />
So here is our simple recipe for delicious chicken and dumplings:<br />
<br />
4 large fryer chicken breasts<br />
Water<br />
3/4 - 1 stick of butter<br />
4 cups of milk<br />
Salt and Pepper (to taste)<br />
<br />
2 cups all-purpose flour, plus about 1 cup to flour your rolling surface<br />
1 tsp salt<br />
Ice cold water<br />
<ul><li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Place chicken in a large pot and cover with water. Salt and pepper liberally! (I like to use fryer chicken breasts with the bone in and fat left on because it adds so much flavor to your stock. We'll remove it later.)</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Boil chicken until juices run clear.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Remove chicken from pot to cool. Turn heat way down.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">While chicken cools, toss your butter in the pot of chicken stock.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Make your dumplings. Combine flour and salt with a fork and add ice water until you begin to get a good dough consistency. You don't want to use too much or you'll never be able to get your dough to stick together. This is the part that takes practice. I would say you'll need no more than 1 1/4 cup of the ice water. You may add extra flour to your dough to get it right. :)</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">When you get a good doughy ball, scatter about 1/2 cup of flour on your rolling surface. Flour your rolling pin too. Use all of your dough to roll one hugs sheet about 1/8 - 1/4" thick.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Use a sharp knife or a pizza cutter (super fun and super easy way) to cut your sheet of dough into long 1" strips. Then, go back and cut across so that your dumplings are 2 - 3" long.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Your chicken should be cooled by this point, so remove it from the bone into bite sized pieces and return to your pot. </li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Add milk and turn up heat on pot until you get a slow boil going.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Now you're ready to add the dumplings. Separate them so you don't wind up with a big clump of dough. Drop in 2 or 3 at a time all around the pot. Some will float, so dunk them under with your spoon so they begin to cook.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">After you've added all of your dumplings, this will need to simmer for about 30 minutes more. Stir occasionally to prevent sticking and clumping.</li>
</ul><div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Ya'll enjoy! These are better the next day, so make enough for leftovers! I made a variation of Mamaw's "Cheesy Spaghetti" recently, but you would have gained 10 pounds from this post instead of 5 if I'd have shared it... so another day! :)<br />

I love to cook and my family loves to eat - well, two of them do... We are going to work on JC this summer. Tonight I made one of JC's favorites - spaghetti - in celebration of his last day of kindergarten. As a special treat, he and I made <a href="http://fullbellies.blogspot.com/2011/05/homemade-olive-garden-bread-sticks.html"><span style="color: blue;">"Homemade Olive Garden breadsticks."</span></a> I found the recipe on a darling little blog called <a href="http://fullbellies.blogspot.com/"><span style="background-color: white; color: blue;">Full Bellies, Happy Kids</span></a>. These turned out really yummy, but here are a few tips from my experience.<br />
<ul><li>Even if your boy decides at the last minute when you have the dough at the perfect consistency that he wants to help after all, DO NOT OVER-KNEAD THE DOUGH. Instead of light and airy you get very dense breadsticks.</li>
<li>No matter how hungry your family is. Even if the baby has started nawing on Daddy's big toe, DON'T SKIMP ON THE RISING TIME. 45 minutes minimum.</li>
<li>USE LESS SALT THAN THE RECIPE CALLS FOR. For the buttery, garlicy salty topping, the recipe calls for 2 tsp of salt. I used maybe 1 1/2 and it was still too salty.</li>
<li>BUY CUTE LITTLE BASKETS FROM DOLLARE GENERAL AND WRAP THEM JUST LIKE OLIVE GARDEN!!! It makes them more sexy. :)</li>

We started the allowance thing with him about 6 weeks ago. The first two weeks he spent his $5 immediately on the first thing (or various small, <strike>crappy</strike> things) he could find. Then Curtis and I talked to him a little bit about saving. We asked him if there was something he really wanted that he could save his money for: BATMAN suit!!! He has been wanting one since right after Halloween last year, and we kept saying he had to wait until Halloween time, because let's face it - you can't really find a Batman suit at The Wal any'ole time of the year!So, we looked on-line and found the one he wanted, and he begged every single <strike>minute of the</strike> day to go and get it. Finally this weekend, we went and he bought his beloved Batman suit! The plan is that he will be Batman, and Lucy will be Baby Batgirl for Halloween. (I have great plans for her costume. I hope it comes together like I am envisioning it!)<br />

</div>Speaking of family, Curtis has been Super Daddy! With me working most weeknights and Saturdays, he has been taking the lead with the children. Dropping off, picking up, getting them fed, wiping noses and giving baths. Last night, poor Lucy had tuckered out and gone to bed before I got home. :( JC waited up for me though. :) I did get a big smile from Lucy when Daddy brought her to me to feed her sometime around midnight. (I had slept tight through her yelling over the monitor which is right by my pillow. Too tired? Yes I think so.) She gave me a huge smile and looked like she was thinking, "Oh, here's my Mommy." :) <br />

His behavior has been wonderful, and he is learning a lot! They are learning the D'Nelian writing style, which is totally new for me, but I am on board with whatever works! He loves recess, computer lab, PE and art! His school only has one assistant teacher for the 10 Kindergarten classes, so I plan to volunteer in his classroom a couple of hours here and there when my work schedule slows down. Sorry friends! Prompted by <a href="http://danielandcolbymartin.blogspot.com/">Colby</a> for baby info, I thought I would update! :)<br /><div></div><div><br /><div>We are doing GREAT, just been super busy with work, a busy FIVE year old (YES, five!!!), and getting ready for our new baby girl to be born. As I write this, I am 33 weeks pregnant, and cannot believe she will be here in just 7 (or less) short weeks. She is due March 17, but I have had a feeling all along that she would be here earlier than that. We'll see!</div><br /><div>Our baby girl's name will be Lucille Elizabeth, and we will call her Lucy! Both names are from my grandmothers - Lucille from my Dad's mother who passed away when I was six, and Elizabeth from my Mom's mother. I had everything ready for <span id="SPELLING_ERROR_2" class="blsp-spelling-error">JC's</span> arrival by the time I was like 5 months pregnant, and at nearly 8 months pregnant with Lucy, I am sad to say that the nursery isn't even ready. In our defense, we weren't chasing a wild child around while preparing for <span id="SPELLING_ERROR_3" class="blsp-spelling-error">JC</span>. Ha! It will get done - I know it will. We pretty much have everything; it's just not set up and pretty yet. I will post pics when we get it done!<br /><br /></div><div><div>I am enjoying this stage of pregnancy, other than the fact that I feel huge... She is a very active baby and I love feeling her moving around. I wonder if this will be my last pregnancy? Curtis says "yes," but I am not sure. In any case, I am savoring these special moments while my baby girl is still safe inside. But, I sure can't wait to get her here!</div><br /><div align="left"><span id="SPELLING_ERROR_4" class="blsp-spelling-error">JC</span> is doing great! He still loves <span id="SPELLING_ERROR_5" class="blsp-spelling-error">ECEC</span>. His teacher, Mrs. Turner, is out on maternity leave. She had a sweet baby girl earlier this month. He really likes Mrs. Mathis, who is subbing while Mrs. Turner is out. Soccer will be starting back up soon and he can't wait. We just got him signed up for t-ball again this summer, and Curtis and our friend Gabe will be coaching their team. That should be a lot of fun!!!
